‘I could make a living out of this’: New Augusta food truck specializes in breakfast

AUGUSTA, Ga. (WRDW/WAGT) - Food trucks are becoming very popular in the CSRA, appearing at festivals and other events.

Many of them offer lunch and dinner options, but not so much when it comes to breakfast.

Enter the Mustard Seed Eatery.

Two months ago, owner Nicole Walker opened the food truck in Augusta, specializing in breakfast food.

“A lot of food trucks offer lunch and dinner. I haven’t really come across many food trucks that offer breakfast,” said Walker.

As the search continues for a missing woman who wandered into the woods after a car crash, law enforcement is calling on the public’s help.

They offer soul food, including fried flounder, grits bowls, chicken, hot dogs and waffles.

It was a risk Walker was willing to take.

“I enjoyed cooking for my family, and they started to demand for me to cook every week. So I was like, well, I could make a living out of this, but also serve the community. It’s kind of a risk because you don’t know what the outcome is going to be,” said Walker.

That concept led to the name - The Mustard Seed.

“When I first mentioned the name to my mom, she’s just like ‘No way’ and I’m like, ‘Well, it sounds good to me. I want to run with it.’ Just being able to take a risk, but have faith that it’s going to blossom into something,” said Walker.

Head chef Derrick Simmons has more than 20 years of experience in kitchens around the CSRA, and he likes being able to see the people he’s cooking for.

“Me being closer to people actually is better for me because I can see their reaction. When I see them smile when they take a bite of what we prepare for them, that’s everything to me,” said Simmons.

Both Walker and Simmons are hoping to see more people at the window as summer ramps up.

“Whenever you hear about Mustard Seed Eatery, come check us out. You won’t be disappointed,” said Simmons and Terrence Bradley, co-owner.

While Walker still works another job, she hopes the truck becomes a full-time opportunity for her.
